Fudgy Vegan Brownies




 Just because I was in the mood for some yummy chocolate brownies and thought you might be too. As usual I made these a bit healthier with whole wheat and oat flour, omitting dairy and eggs and replacing the fat source with coconut oil- if you are new to coconut oil you should check out the nutritional boost it offers and virgin coconut oil imparts a subtle but delicious flavor. Cacao is the purest and healthiest way to add chocolate to recipes. These are really easy to make, taste amazing and are moist and fudgy.

  • 1 cup of unbleached flour
  • 2/3 cup of whole wheat flour
  • 1/3 cup oat flour (optional, can also be replaced by using 1 cup of whole wheat flour, total flour in recipe should equal 2 cups)
  •  2 cups of sugar
  • 3/4 cup cacao powder
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 cup water
  • 1 cup virgin coconut oil
  • 1 tsp vanilla
  1. Preheat oven  to 350
  2. Spray a 9 x 13 pan with non stick spray- or rub with oil
  3. Mix dry ingredients, add wet and mix until combined
  4. Bake for 25-30 min

*Let cool for at least an hour- overnight refrigeration yields the best results. If you can't wait they will taste fantastic but will be hard to cut and a crumbly mess- I won't judge, I've indulged in the crumbs before :)
